Mom's Oyster Stew

Ingredients
  • 1 qt heavy cream
  • ½ cup butter
  • 12 ounces raw oysters (undrained)
  • Sea salt
  • Fresh ground pepper
Directions 
  1. Bring cream to just under simmer, maintain heat for ten minutes.
  2. Add room temperature butter to cream, stir until completely melted.
  3. Add oysters, including juices (liquor) to cream and butter mixture.
  4. Cook until edges of oysters begin to curl.
  5. Add salt and pepper to taste.

If you like it a little spicy, you can add cayenne pepper to taste.

This dish also goes well with green onions, crackers and mild white cheeses on the side.
