Recipes - Jay's Sunrise Casserole
Italian Beef
Ingredients
- 1 Rump roast (this recipe is for a 5-pounder)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon cracked black pepper
For the gravy:
- 4 cups beef broth
- 1 tablespoon dried oregano
- 2 teaspoons dried thyme
- 1 teaspoon black pepper (more to taste)
- 2 teaspoons Tabasco sauce
- 8 garlic cloves (minced)
- 4 tablespoons Worcestershire sauce
Directions
- Preheat oven to 325 degrees
- Rub the roast with garlic powder, oregano and pepper
- Cook, uncovered, about 30 minutes per pound (will still be fairly rare inside)
- Let cool, then slice thinly
- Add remaining ingredients to the roast pan drippings
- Simmer for 20 minutes (scrape up bits on the bottom of the pan)
- Add beef back into gravy; cover and marinate overnight
- Reheat and serve in crusty rolls
