Recipes - Jay's Sunrise Casserole



Italian Beef

Ingredients
  • 1 Rump roast (this recipe is for a 5-pounder)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon cracked black pepper
For the gravy:
  • 4 cups beef broth
  • 1 tablespoon dried oregano
  • 2 teaspoons dried thyme
  • 1 teaspoon black pepper (more to taste)
  • 2 teaspoons Tabasco sauce
  • 8 garlic cloves (minced)
  • 4 tablespoons Worcestershire sauce
Directions
  1. Preheat oven to 325 degrees
  2. Rub the roast with garlic powder, oregano and pepper
  3. Cook, uncovered, about 30 minutes per pound (will still be fairly rare inside)
  4. Let cool, then slice thinly
  5. Add remaining ingredients to the roast pan drippings
  6. Simmer for 20 minutes (scrape up bits on the bottom of the pan)
  7. Add beef back into gravy; cover and marinate overnight
  8. Reheat and serve in crusty rolls
